Pesto Power Bowl

Pesto Power Bowl

A close sister to the "I Actually Don't Feel Like Cooking" Mac Bowl, please welcome our pesto power bowl (because sometimes you need permission to cook a meal that doesn't feel like a "recipe")!

She's basic. She's simple. She's exactly what we need when we don't feel like cooking, want something filling + healthy, and have mouths to feed!

⭐️ BONUS: This is a great meal to plan during a week where you're making the pesto salmon, since you're already have the pesto!

Ingredients

  • Pasta of choice
  • Chicken sausage
  • Pesto
  • Frozen peas

Instructions

  1. Pop the chicken sausage in the air fryer or oven at 350° for 5-7 min to warm.
  2. Cook the pasta according to package instructions (when you have 2 min left, add in the frozen peas).
  3. Dump the pasta and peas into a strainer, and add the pesto right to it.
  4. Serve with your chicken sausage, and done!

Feeding Kids

If you're kiddos don't like things touching, separate it out otherwise serve it in a bowl just like yours! Charlotte loves this.

Notes

  • You can eat this hot or add room temp.
  • I added some arugula into mine for some extra greens, totally optional.
  • The pesto is typically in the cold section.

Substitutions

  • Vegan or vegetarian? Get a vegan pesto and sub the chicken sausage for chickpeas or tempeh.
  • Hate chicken sausage? Try rotisserie chicken, steak, or any protein of choice!

Phone eats first!

If you make this, send us what it actually looked like on your kitchen table. We don't need Pinterest inspo, we need the real one. Burnt edges, mismatched plates, messy kitchens. Email it to jointhekitchentable@gmail.com with the subject FOOD PIC.
