The Best Roasted Eggplant

Eggplant gets a bad rep so when someone commented that the Skillet Gnocchi with Sausage and Eggplant was the first time they actually liked eggplant, I knew I had to keep spreading the word: Eggplant is the most slept on veg.

Okay sorry I digress... back to the Eggplant!!!!

Eggplant isn't super popular and I think it's because we're just cooking it all wrong. The super high water content means eggplant leans on the soggier side but this method completely changes that. You can even see how to water comes to the surface and forms droplets.

The salt draws out some water so you're left with a crispy flavor packed eggplant stick (okay I want to say fry but I know yall will come for me if I call it a fry because even though these are delicious... eggplant can never be my loved potatoes). So.... sticks? They are!

What you need:

  • 1 large eggplant
  • Plenty of salt
  • Seasoning of choice (I like garlic and italian seasoning but they sky is your limit!)
  • 1 tbs(ish) olive or avocado oil

How you do it:

  1. Cut your eggplant into sticks 1/4 - 1/2 inch thick
  2. lay them out flat on baking sheet and salt them liberally- don't be shy here! Flip them over and salt the other side
  3. Let them rest for 30-45 minutes and then soak up all the extra moisture by plotting with a dish towel or paper towel
  4. Preheat oven to 450
  5. Drizzle with oil, toss, and then sprinkle generously with seasoning of choice.
  6. Bake for 10 minutes, flip and return to the oven for an additional 10 minuts.
